Apúndaro se trouve exactement à la frontière entre deux zones climatiques qui ne pourraient pas être plus différentes. À l'est de la ville, les montagnes s'élèvent, à l'ouest, elles descendent dans un paysage ressemblant à un désert. C'est là, où la chaleur et le froid se rencontrent, que se trouve la ferme d'Alejandro Cerano. Des pins des montagnes poussent à côté d'arbustes des terres basses. Le lieu est également surréaliste parce que la saison sèche y est longue : cette région a peu en commun avec Veracruz, la région caféière du côté est du Mexique.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eSur 3 ha, Alejandro cultive du café. Il nourrit le sol avec du compost de vers, irrigue les plantes par goutte-à-goutte et sèche les cerises de café entières, sans les dépulper. L'altitude et la croissance lente donnent au café une acidité juteuse qui nous rappelle les pommes. Le processus Nature crée une texture très arrondie et une fruité délicat.
